The best quality fish results from a rapid freezing process. Rapid freezing induces the formation of only very small ice crystals which, unlike large crystals, do not rupture the cell walls and thus do not result in the loss of cell fluids. Fish is usually frozen within 3 hours of being caught. However when processed fish is required (filets, Head-Guts-Tail off for example), deep freezing is only performed once light frozen catch has been entirely processed.
Matching in full EU sanitary standards, we can also supply dried fish (sea container), freshly processed fish, live lobsters (air freight) and canned fish.
